How to Make: Baci Di Dama Cookies ("Lady's Kisses" Recipe)

Baci Di Dama "Lady's Kisses" Recipe

140g (1 ¼ cups) hazelnuts, toasted and skinned*
140g (1 cup) rice flour
100g (3 ½ oz.) unsalted butter, room temperature
100g (½ cup) sugar
pinch of salt
55g (2 oz.) bittersweet or semisweet chocolate, chopped


  1. Ground hazelnuts in food processor. Pour into separate mixing bowl.
  2. In an empty food processor, add rice flour + cold butter. Process shortly, then add it into the same mixing bowl.
  3. Dump in flour, sugar and a pinch of salt. Knead the mixture into dough.
  4. Divide dough into three equal pieces and roll each piece until it’s ¾ inch round.
  5. Wrap in plastic and let them harden in the freezer for 15 minutes or refrigerate for 2-3 hours.
  6. Preheat oven to 325ºF. Line baking sheet with parchment paper.
  7. Remove the chilled dough and divide each log into 15 pieces each. Roll each piece into spheres. Place on lined baking sheets.
  8. Bake for 5-7 minutes. Rotate baking sheet. Bake another 5-7 minutes until lightly golden brown.
  9. Let cookies cool completely on baking rack.
  10. Set a clean, dry bowl over a pot of simmering water.
  11. Add chocolate, and stir to melt.
  12. With a spoon or parchment paper cone, dollop a chip-sized amount of chocolate on the bottom of one cookie, and sandwich it with another cookie.
