Simple Brownies

I missed baking so much I turned on my oven in 90degree heat to bake some brownies. It was worth it.



Simple Brownie (Chewy/Fudgy) 

1/2 cup butter
3/4-1 cup white sugar*
2 eggs 
1 teaspoon vanilla extract 
1/2 cup all-purpose flour 
1/3 cup unsweetened cocoa powder 
1/4 teaspoon baking powder
1/4 teaspoon salt 

Semi-sweet chocolate chips (opt.)

*For the darker colored brownies on the right side of the image, I used 1/2 cup dark brown sugar + 1/4 cup granulated sugar, and only used 1 egg instead of two. (I thought this option looked and tasted yummier:)

Preheat oven to 350F (175C.) Grease and flour an 8 inch square pan. In a medium saucepan, melt the butter. Remove from heat, and stir in sugar, eggs, and vanilla. In a separate bowl, sift together the dry ingredients: all-purpose flour, unsweetened cocoa powder, baking powder and salt. Spread batter into prepared pan. Sprinkle on some chocolate chips. Bake in preheated oven for 25 to 30 minutes. Use cake tester, beware not to overbake! Rather underbaked than overbaked.
