These cuppies were so delicious (with great texture I may add) I didn't need to frost them. Or rather, they were all gone before I had a chance :)

makes 12 cupcakes
250g butter, softened
170g caster sugar
1/4 tsp. fine salt
1 tsp. vanilla extract
3 large eggs
190g cake flour
1 1/2 tsp. baking powder
Preheat oven at 180°C (365°F) and line muffin tins with paper cups.
Sift together cake flour & baking powder, set aside.
Beat together butter & caster sugar until pale & fluffy. Mix in vanilla vanilla extract. Then add in eggs, one at a time, beat thoroughly for each addition. Add in sifted cake flour and baking powder, mixing just until combined (do not over mix!)
Divide the thick batter into the paper cups evenly, place them into the preheated oven and bake for 20 to 25 minutes.
