Peanut Butter Banana Cake

do those light strips on the table give you an illusion that the cake is tilted? it makes me want to straighten it.

Banana Cake
adapted recipe from auntyyochana

makes two 6 in rounds

180g butter, softened
180g caster sugar
2 extra large eggs
280g mashed bananas
30g evaporated milk
1/2 tsp vanilla extract
250g cake flour
1 tsp baking powder
1 tsp baking soda

  1. Using an electric mixer, cream butter and sugar till light and creamy. Then pour in eggs gradually and beat till creamy. Add in the evaporated milk, mashed bananas and vanilla extract and mix well. Add in cake flour, baking powder and baking soda and beat for only a little while. Grease and line the pans, then pour in the batter.
  2. Preheat and bake at 175C for about 50-60 minutes. Test for doness.
  3. For cooling, invert the cake onto wire racks so the top is facing down. Remove the lining, then let the cake cool until warm. Wrap with cling wrap, then let it continue to cool in the refrigerator until cold.

Peanut butter Frosting
recipe from browneyedbaker

5 tbsp. unsalted butter, room temp.
1 cup creamy peanut butter
1/2 tsp vanilla extract
1/4 tsp salt
1/3 cup heavy cream

In a bowl of an electric mixer fitted with a paddle attachment, cream together the butter and peanut butter until smooth. Then add in vanilla and salt. With the setting on low, slowly add in the heavy cream and beat until incorporated. Then beat on high speed until mixture is light and smooth.
